Coconut Oil

 So yesterday's dinner was Carnitas. It's fried pork, usually it's eaten with tortillas and Pico de Gallo ( jalapeño, tomotoes, onions, cilantro) 
 I have been cooking with Coconut Oil. Not sure that it matters when cooking pork, ( because pork is fatty on it's own ) but it's a better alternative to conola oil. 
 I've seen coconut oil at many stores, but the most inexpensive is at Trader Joes. It's about six dollars. 
 I made Curry Chicken a few nights back, and the coconut oil helped a lot since I had no coconut milk. So the coconut flavor was there without the milk, no biggie! 
 Coconut Oil is DELICIOUS!
